My kids really love vege fritters. They scoff them down like there is no tomorrow!
I like to eat them too, but I also like them because they are packed full of veges, and the veges are barely cooked, so still lots of nutrients.
Here is the recipe.
Mix in a bowl 1 egg, salt, pepper, curry powder, self raising flour and milk. You need enough of each to make a batter.
Add in finely chopped raw veges. Anything you have to hand will work. My favourites are: onion, carrots, brocolli, cauliflower, peas, corn, capsicum, and celery.
Now cook as you would fritters.

A picnic basket
Anya had a birthday party to go to a short time ago.
We decided together that her little friend would enjoy a picnic basket full of goodies.
Here is the finished product:
Inside, there is an apple, pear, orange and banana - also a picnic rug.
Anya liked it so much, that it was difficult to give away!!
The party was awesome, and Anya had a great time and came home very tired.
Here are the party goers!

My preserving efforts

I had a go at making jam the other day. What I thought would have been a very time consuming and difficult task turned out to be easy and straightforward. I decided to make Rhubarb and banana jam. We have yet to taste the results, but I'm sure it will be yummy!!
A few days later I also had a go at feijoa jam. The smell in the house was just delicious!
I also tried my hand at beetroot chutney. Very easy to make, and so delicious!

My Lovelies

Lovely number 1: JESSE He is awesome, loving and has a great imagination. His number one pastime at the moment is Lego. I love watching him play and figure things out. |
